This has too much information (wish they'd broken it down into separate pages), BUT what you're looking for is in heading 3, "Contributing to Wikipedia." Video: Wikis in Plain English
This very succinct video does well at defining wikis (remember, a wiki is just an online collaborative tool, ideal for project management, that easily allows a group's members to add, edit and format a Web page without having to know all that HTML gobbledygook or programming code) and demonstrating how they work. Wet Paint: Wiki Pages
This is a wiki site that allows you to set up a free account. An intuitive and easy to use interface with the pages makes for easy remote collaboration on projects. [Added 2/09]

Wikipedia: Good Articles
From _Wikipedia_: "Good articles are articles which are considered to be of good quality but which are not yet, or are unlikely to reach featured article quality. Good articles should meet the good article criteria and have passed through the good article nomination process successfully. In short, they should be well written, factually accurate and verifiable, broad in coverage, neutral in point of view, stable, and illustrated, where possible, by relevant images with suitable copyright licenses. Good articles need not be as comprehensive as featured articles, but they should not omit any major facets of the topic: a comparison of the criteria for good and featured articles describes further differences."
